ZUCCHINI, LEMON AND GARLIC SAUCE

INGREDIENTS

  • Il Nonno Caprese (Fior di Latte, Tomato & Basil) Mezzelune

  • 20ml olive oil

  • 30g butter

  • 1 medium green zucchini

  • 2 medium squash

  • 2 cloves garlic crushed

  • 120ml vegetable stock

  • 1/2 cup of cream

  • 2 tsp finely grated lemon rind

  • 75g baby spinach leaves

  • 1/3 cup coarsley chopped fresh chives

  • Salt & pepper

  • Shaved parmesan cheese

  • Season to taste

METHOD

  1. In a fry pan, heat the butter and olive oil

  2. Cook finely chopped zucchini and garlic over high heat until tender

  3. Add vegetable stock and cream

  4. Bring to the boil

  5. Reduce heat, add lemon rind, spinach and chives

  6. Stir through cooked il Nonno Caprese (Fior di Latte, Tomato & Basil) Mezzelune

  7. Season with salt, pepper, shaved parmesan cheese and serve
